Nutritious brain fuel sandwiches

Is it a constant battle to find healthy lunches and snacks?
Try one of the following deliciously healthy options.

1 or 2 slices of rye bread lightly buttered, with butter or ghee, combined with:
• Chunky cottage cheese, chopped chives and cucumber slices
• Dollop of hummus and lettuce
• Small roast chicken breast, thinly sliced and tomato
• Small salmon fillet with a dab of cream cheese and lettuce
• Hard-boiled egg mashed with a tablespoon of plain smooth cottage cheese and some chopped spring onions or gherkins
• avocado and cottage cheese

Season to taste
